Xocai Nugget Pudding


  • 1/3 cup cornstarch
  • 6 chunks dark chocolate (Xocai Healthy Chocolate Nuggets)
  • 3 cups milk (lactose-free, fat-free milk)
  • 5 packages artificial sweetener
  • 1 tbsp pure vanilla extract
  • 1 tbsp low-fat whipping cream (pourable)


  1. On stove top in a double boiler melt Nuggets and whipping cream. In another pan, bring milk, cornstarch and sweeter to a boil stirring consistently, to avoid lumps, until desired thickness. Remove from burner and add melted Nuggets mixture and vanilla. Pour into desert cups and cool in refrigerator for several hours. Serves 6-8
