Vegan Chili


2 Tb. oil
1 large onion, peeled and chopped
4 cloves garlic, peeled and minced
2 red bell peppers, seeded and chopped
3 large sweet potatoes, peeled and chopped
3 ears corn, shucked and cut off the cob
2 Tb. Masa
2 – 15 oz. cans black beans, drained
2 – 28 oz. cans crushed tomatoes
1 cup water
1 1/2 Tb. ground cumin
2 Tb. ancho chile powder
2 tsp. salt
Black pepper to taste
Fresh chopped cilantro for garnish
