
Ingredients:
- 2 sweet peppers
- 3 medium heirloom tomatoes
- 1 small cucumber
- 1/2 yellow onion
- 4 cloves garlic
- cup parsley
- red wine vinegar
- 1/4 cup olive oil
- Salt and pepper
Instructions:
- Combine all ingredients in a food processor or blender. Blend until puréed. If using a blender, pour through a fine strainer. Chill or serve immediately.
