- 1/4 cup brown sugar, packed
- 1/3 cup dark molasses
- 2 teaspoons Dijon mustard
- 1 pound dried navy beans, rinsed and soaked overnight
- Kosher salt to taste
- 1 tablespoon liquid smoke
- 3/4 pound salt pork, rinsed and cut into 1/2-inch cubes (1 12- ounce package)
- Water to cover
- 1 cup chopped sweet yellow onion
- In a slow cooker, combine all ingredients except salt.
- Cover and cook on low 12 to 14 hours, stirring occasionally.
- Add salt to taste when beans are tender.
