Raspberry Peach Crisp


  • 4 cups sliced fresh peaches OR frozen unsweetened peach slices
  • 2 tablespoons sugar
  • 1 tablespoon quick cooking tapioca
  • 2 tablespoons red raspberry preserves
  • 1 cup quick cooking oats
  • 3 tablespoons flour
  • 3 tablespoons packed brown sugar
  • 1 1/4 teaspoons cinnamon
  • 3 tablespoons butter, melted


  1. Preheat oven to 375 degrees. In large bowl combine peaches, sugar, tapioca and raspberry preserves. Place fruit mixture in a 2 qt square baking dish.
  2. For topping~In a medium bowl, combine oats, flour, brown sugar and cinnamon mix in butter and make crumbly. Sprinkle over fruit. Bake for 45-50 minutes or until bubbly and cool on a wire rack for 45 minutes serve warm with ice cream or whip cream
