Here’s the truth. I love to make this lasagna roll ups recipe, and we make it at our house all the time. It is really one of my families favorite recipes. But it is a little more work than what I usually like to do during the week.
On the other hand, it’s also amazing and totally worth it. If you don’t have the extra time during the week, make them ahead of time. They are perfect for freezing!
Here are a few suggestions to keep in mind when making this recipe:
- Make it on a weekend when you have extra time.
- Double (or triple) this recipe and freeze the leftovers for later.
- For a faster version, sub your favorite store-bought sauce for the homemade version.

How do you make the World’s Greatest Lasagna Roll Ups Recipe?
You will need a few ingredients on hand. I have the meat sauce and noodles and cheese separated out for easy shopping and organization.
Remember that to make a faster version, substitute your favorite store-bought sauce for the meat sauce recipe.
Meat Sauce Ingredients:
- Italian Sausage
- Lean Ground Beef (I like 93/7)
- extra virgin olive oil
- chopped onion
- 2 cloves garlic (minced)
- water
- 15 oz can diced tomatoes (I use flavored fire roasted with basil)
- 16 oz can tomato sauce
- 6 oz can tomato paste
- 1 1/2 tsp dried basil
- 1 tsp Italian seasoning
- 1/4 tsp ground black pepper
- 4 Tbsp chopped fresh parsley
Noodle and Cheese Ingredients:
- Uncooked Lasagna noodles
- 16 oz ricotta cheese
- 1 egg
- 1/2 tsp salt
- sliced mozzarella cheese
- 3/4 cup grated parmesan reggiano
How do you make Lasagna Roll Ups?
Follow along with these easy step-by-step instructions on how to make lasagna roll ups.
1. Start browning your meat on medium heat in a large saucepan.
2. Cook the onion and garlic on medium heat in a Tbsp of olive oil. Then add the Italian seasoning and basil. Simmer for about 6-8 minutes, or until onion is translucent.
3. Once the vegetables are cooked, add them to the meat mixture. Then add the tomatoes, tomato sauce, water, black pepper, and 2 tbsp of fresh parsley. Allow to simmer uncovered for 1 hour.
4. Bring a large pot of water to boil and cook the lasagna noodles for 8-10 minutes. Drain and rinse with cold water. Start shredding the parmesan reggiano.
5. In a small mixing bowl, combine remaining parsley, ricotta cheese, egg, 1/2 tsp salt. Mix well.
6. Heat the oven to 375. Pour 3/4 of the meat sauce into the bottom of a 9 x 13 glass baking dish.
How do you make easy lasagna rolls?
7. To make the lasagna rolls you will need to place each noodle onto a flat surface.
8. Cover with cheese mixture and then sprinkle a little parmesan reggiano cheese on top.
9. Now it’s time to start making the perfect lasagna roll ups. Start rolling the noodles.
10. Now it’s time to add them to the meat sauce.
11. Finish rolling all of the lasagna roll ups and place them into the dish with the meat mixture.
12. Once you have all of the lasagna roll ups lined into the dish, cover each with a little more of the meat mixture.
13. Top each roll with a half a slice of mozzarella cheese and then cover the dish with foil.
How long do you cook Lasagna Roll Ups?
You’ve done all of the major work. Now it’s time to sit back and relax and bake these lasagna rolls to perfection.
14. Cover the dish with foil, and then place the lasagna rolls in the preheated oven and bake for 20 minutes.
15. Remove foil and bake for an additional 10 minutes uncovered. Remove from the oven and allow to cool for 10 minutes before serving.
This recipe makes 18 roll ups (2 sets of 9 in a 9 x 13 dish) with a little extra left over to make a few more if desired. They are just delicious, and a perfect dish to share at a party or for dinner.

- 1 pound Italian Sausage
- 1 pound Lean Ground Beef I like 93/7
- 1 Tbsp extra virgin olive oil
- 1/2 cup chopped onion
- 2 cloves garlic minced
- 1/2 cup water
