
Ingredients:
- 1 large cucumber
- high-quality extra virgin olive oil
- 1/4 pound greek feta
- 1 dozen Kalamata olives
- 1 large red onion, sliced thinly
- 5 large ripe tomatoes
Instructions:
- Slice the vegetables into bite-size wedges
- Toss in a bowl with olive oil
- Place feta on top of the salad or break up into crumbles
