Coconut Pound Cake

Ingredients:

  • 1 stick of butter, softened
  • 1/2 cup melted coconut oil, slightly cooled
  • 5 eggs
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 t vanilla
  • 1 cup xylitol

Instructions:

  1. Preheat oven to 350 degrees.
  2. 2)In a large bowl, using an electric mixing, cream the butter, oil, sugar and xylitol. Add the eggs and vanilla and mix again. Add the flour and mix until combined.
  3. Pour into a greased, floured bundt pan.
  4. Bake for about 1 hour and 5 minutes or until cooked through.
